Ingredients
- 2 12" Pizza Crusts, pre-made
- 2 cubes pesto, (see pesto recipe)
- 1 12 oz can pizza sauce
- 1 8 oz pkg feta cheese, slice thinly
- 1 12 oz jar marinated artichoke hearts, cut in to 1/8's
- 1 6 oz jar sun-dried tomatoes in olive oil, sliced
- 30 - 40 kalamata olives, pitted and cut in 1/2
- 1 12 oz jar marinated eggplant, sliced (optional)
- 1 12 oz jar roasted red pepper, sliced (optional)
Directions
Pre-heat oven to 375º F. Drain all the ingredients, preserving the oil from the tomatoes, and place in individual bowls. Brush top of the crusts lightly with the olive oil from the tomatoes. Spead the pesto on each crust and top with pizza sauce. Spread the slices of Feta on the pizza, then top evenly with the other ingredients. Place directly on rack in center of oven for 20 - 22 minutes.
