Ingredients

  • 1 ¾ Cups light brown sugar
  • ½ Cups Vegetable oil
  • 2 cups Whole Wheat Flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 large eggs
  • 1 teaspoon vanilla
  • 4 cups fresh pears, sliced, seeded
  • ½ cup walnuts, coursely chopped
  • 1 Tablespoons butter, unsalted
  • ½ Cup water

Directions

Cream together, oil and sugar, add eggs and vanilla, and beat well. Sift together the dry ingredients and add to the first mixture. (The batter will be very dry.) Sauté pears lightly in butter and a little water (not too much) until soft. Add to the batter along with the walnuts. Grease the bottom of a 9" loaf pan and dust lightly with flour. Add the batter to the pan, bake about 40 minutes in a 350 degree oven.

Notes

This is a recipe that I made up in August of 1988 at the Bungalow Colony. It was a very wet weekend and the pears where falling from the tree outside our house. Susan also made a pear cake, but EVERYONE liked mine better!
