Ingredients

  • 1 pound bacon, fried crisp, crumbled
  • 3 Tablespoons onion, finely chopped
  • 1 cup bread crumbs
  • 30 - 40 medium mushrooms, cleaned, dried, stems removed
  • 1 cup parmesian cheese
  • 1 teaspoon thyme leaves
  • 1 tablespoon extra virgin olive oil

Directions

Preheat oven to 400ºF. Clean, trim and dry mushrooms. Remove stems and chop. Hallow mushroom caps with a spoon, and set aside. Combine bacon, onions, bread crumbs, mushroom stems, parmesan cheese, and olive oil in a bowl and mix with fork. Fill each mushroom cap with a rounded tablespoon of the stuffing. Place stuffed mushrooms on a lightly greased cookie sheet and bake for 20 minutes.
